Does anyone know how I can practice a multiple vsys? The VM-Series do not support vsys.

I think the only way that you'd be able to do this is if you had a physical hardware LAB device. I'm not aware of any other way to really play around with mutli-VSYS deployments.

On a similar related question - does anyone know the correct syntax to properly merge a migrated configuration (migrated using the expedition tool from the ASA and uploaded to the Palo Alto Networks Firewall - Model 5420 running in multiple vsys and has several vsys) and specifically, we want to merge the IPSec VPN tunnels to say vsys two (vsys two is just for vpn related traffic and let's assume it is called vpn). thanks!
