Please let me know the difference between PANOS version 10.1 and 11.1 .

This is a broad question and between versions 10.1 and 11.1, there are also versions 10.2 and 11.0. When it comes to new features introduced in each version I would recommend to start looking into below release notes:

Features Introduced in PAN-OS 10.2

Features Introduced in PAN-OS 11.0

Features Introduced in PAN-OS 11.1

Please also note that not every Firewall supports all versions. Here is Palo Alto Networks Compatibility Matrix.
