I am looking for information in an official document that mentions the automatic update of the Cortex XDR tenant. I cannot find any information on the subject.

Since this is managed for you there's not much information available because there's nothing that you actually have to do. The agent itself will generally see an upgrade every month and that information is available HERE where the actual XDR release information can be found HERE.
