Basically you can choose to allow/deny whatever traffic you need to and from any interface and zone. Security, NAT and other such rules just need to specify source/destination zones. So in essence the name "dmz" is just a name and can really be anything you want it to be. The one rule to know is that by default PA denies traffic from one zone to another (i.e. from untrust to dmz) unless explicitly allowed.
