Is it possible to role out the latest GP client to only a small group of specific usernames? Also, if so, would it have to be one config per individual or can they actually be grouped?

Yes, you can easily group the users. Add them individually to a global protect portal configuration or per user one configuration (I would reccomend the first, to group them), Depends on what you want to do and if the users also need different permissions like should they be able to disable Global Protect.

But yes it can be done without problems if you only want to update the client for a fe users.
