I need to setup a route to IP Address using a gateway IP. Cannot find anything that is crystal clear on how to set these up.

It kinda sounds like you just need to setup the route and then set the next hop to that gateway address. You can do so under the 'Network' tab and clicking on 'Virutal Routers' and then the VR that you are looking for and then just adding a new static route.

If I understand your description correctly, you'd need to go to your VR and add a static route for a single IP address, hence you'd use a /32 subnet mask, and point it to the next hop router, or gateway
