Currently on v1.1.6 and want to upgrade to latest. Can I go directly to v2.0? (I will make sure the certificates match)

Yes, you can upgrade the GP version to 2.0 from 1.6 directly.

Please follow the mentioned document (Page no-12) for the same.

Yes upgrading from 1.1.6 to 2.0 is allowed. However i will encourage you to read the release notes for the GP client before upgrading. As that will show you all the fixes that have gone in the agent and also if there is any know issue on the newer release which might affect you.
