How to Manually Configure a Gateway for a DHCP Client Interface.

Details

For an interface configured to be as a  DHCP client, a default route pointing to the gateway provided by server is automatically configured.

In some networks, a different gateway for the DHCP client interface than provided by the server itself might be required.

By adding a static route under Network > Virtual Routers > Static Routes wouldn't suffice. The option under DHCP itself needs to be unchecked first.

Under Network > Interfaces > Ethernet Interface (Any L3 interface) > IPv4, we need to uncheck the box for 'Automatically create default route pointing to default gateway provided by server'.

Note: That box is always checked by default when the interface is chosen to be DHCP Client.
