Producing an application usage graph?

Is there a way to produce a graph of the usage of a particular application?

Bytes or sessions would be acceptable, I just want to be able to show a rough usage trend over the course of a day/week.

Sounds like the Application Command Center (ACC Tab) would be ideal for your request. You can drill down to a certain application and get detailed information with options for time and you can sort by sessions or bytes

Thanks, but that's not really what I'm looking for.

The ACC is just a total for a period of time.  I'd prefer to be able to do some sort of graph, a little the one on Monitor/App Scope/Network Monitor but just for specific applications.

you can set the ACC to a specific time window and then click on the app you want information about, this will allow you to drill down and view more relevant information about this application (sources, destinations, users, ...)

I believe the closest thing to what you are looking for is the app-scope.
