I cannot find any information about in what steps the Pro per GB / day license can be ordered.
Is there a minimum amount that you have to buy?

Yes, it is not mentioned in the docs. Would suggest you reaching out to the local accounts team and they should be able to help you to choose the right size for the amount you need.
On a technical context:
Pro Per GB denotes the amount of third party log ingestion that would be ingested from various sources on a daily basis in an organization. This means that every sources would have a specific log rate and we should consider the numbers to size our retention per day. The minimum amount of storage sold earlier was 5TB and more or less should stand on the same lines. Please reach out to your account teams and sales team for detailed and personalized purchase info.
