I think once you get into the Data Source SOAR Metrics you'll find what you need.
When you create a new widget, in the query section you can select the SOAR Metrics as the data source
Then specify type:playbook in the query section:
In the Operations tab the Values section defaults to Sum of Execution Count, and if you group by Name you'll have a graph displaying the number of times a playbook executed.
I wasn't able to search by playbook tags, but something else that might be useful are prebuilt widgets for this kind of thing.
When you create a new playbook, there may be widgets suited for your use case somewhere outside of the Incidents group.
