We created a new rule for tableau application. There is an existing app-id for Tableau which specifies ports 80/443 but when we tried to test we got a deny. Service worked when we added SSL app-id. Question is if Tableau shows ports 80/443 as standard ports then why would we need to add SSL for it to work.

It should implicitly use SSL:
In the deny logs you could see port 80 or 443? What PAN-OS version you running?

Please check the application properties as shown by @TranceforLife above. If your version lists 'ssl' instead of 'Implicitly Uses' you need to have ssl in your security policy for the application to be identified correctly.
If this is the case you may want to consider upgrading to take advantage of the implicit use
