We will soon be switching ISPs and will need to change the IP address of our "untrusted" external interface. This is the same interface/IP address that is associated with the GlobalProtect gateway and portal. Are there any special considerations with this change we should be aware of, or is it a simple matter of changing the IP and committing the change? We are also running an HA pair.

In addition to changing on the interface you need to review IPSec tunnels, GlobalProtect, NAT and Security policies etc.

Yes as per @Raido_Rattameister stated, i would just add your new ip/mask alongside your existing address but do not commit.
change portal and gateway configs plus nat and security policies, set new default gateway on VR then commit and pray....
and dont forget to update public DNS.
