Looking for some guidance on this. I am seeing a lot of Poodle Bits vulnerability showing up on our threat monitor. Digging into the threat, the first item is always showing our current router (192.168.0.1) followed by two different attacker host from OpenX.org. I am not sure what this is referring to. I understand it is a vulnerability related to SSL v3. All of our users run the latest browsers with SSL v2 and v3 disabled. Any help would be appreciated.

It's just an informational signature that TLS1.0 was used in the handshake with a CBC cipher suite:

This is pretty common, as a bunch of servers still support TLS1.0, and most clients support that as well. Generally it's not any kind of attack, as the signature only exists to let you track TLS1.0 with CBC.

Ok. Good to know. Just wanted to verify. This is my first PAN device and it is very different than managing our ASA. Off topic, but is there a best practices somewhere when it comes to configuring the PAN? For example, mentioning to not log DNS events?

We try to stay away from making specific recommendations. What may be good for you may not be good for someone else.
We have an admin guide that shows you how to deploy all of the features, but it's going to come short of any actual recommendations with things like the DNS event logging.
