regarding our log retention policy on Cortex. Since we have a 30-day log retention period, is it possible to download the logs for the past 30 days from the console each month as a backup?

Can you please specify what kind of logs you are looking for to backup? If you want to download agent audit and management audit logs then you have option to export them to file and download.
