Could you please indicate which parts are changed from v2 to v3 as you go through the new playbook?

All changes are specified in the webinar recording, but the main ones are extraction improvements, support for more integrations, usage of new fields instead of labels, the addition of phishing alerts ingestion, phishing URL prediction (ML), the new layout including email deletion through the layout and manual phishing incident creation.
