How can I create a customised incident summary report with tables, merged cells etc我? And then populated with incident fields information?

I recommend you work with this automation - GenerateSummaryReports (https://xsoar.pan.dev/docs/reference/scripts/generate-summary-reports) and customize it to fit your reporting needs.
