My question is does expedition have an internal config log. For example when i remap an interface is there a log produced on the action I took? The reason i am asking is that when i present my notes from the migrations it would be easier to copy and paste those logs.

Yes you can extract the logs from monitor > migration logs, and within migration logs you can see a generate report button that will allow you to export those log files.
