I have a rule created to block incoming countries.  How can I create a report or see through traffic logs the hit count on this policy?

The hits counts on any policy can be viewed under Monitor > Reports > Traffic reports > Security rules.

Or for a detailed report, you can create a custom report with a following template:

Note: If the trafic coming from a Private subnets, you may see Ip address in the source address column.
