Will using "*.youtube.com" cover access to www.youtube.com, youtube.com and all other possible combinations?

The dot would be a delimiter. So "*.youtube.com" would not automatically include just "youtube.com". So you would need both to account for both youtube.com and www.youtube.com in your allow/block list.

You need a specific and a wildcard entry for the website:

youtube.com

*.youtube.com

The first will affect access to plain youtube.com, the last will affect <whatever>.youtube.com
