Is it possible to deploy Panorama in AWS and if so what type of EC2 instance should I be creating?

You could technically deploy Panorama in AWS; however, the software is not available in the marketplace currently. I heard similar question during the Ignite 17, and the official answer was "It is not supported at the moment"
Here are a couple a articles that may shine some more light to your question:
Hypervisor Support:
As @TranceforLife mentioned, ESXi Server or vCloud Air are only supported hypervisors (cloud servers) at this stage for Panorama VM. Hyper-V does not currently support Panorama either, unlike all other VM-Series appliances.
Panorama AWS
As I mentioned earlier, Panorama is not available in the AWS marketplace at this time. If you have VM-Series instances deployed in AWS and want to manage that via Panorama, you definitely can do it as per the below article. However, you will have to set up a site to site VPN to AWS, either to their native gateway or an existing VM series.

I thought I already heard of installations in AWS ... I also know for sure that panorma runs perfectly on Microsoft Hyper-V (here I could also tell you more about 😛 )
But the main point is as mentionned by @TranceforLife: The only officially supported hypervisors are ESXi and vCloud Air
