I know we can split tunnel Teams traffic, but is it possible to drill down further and split the Video calls ONLY and keep regular traffic within teams to go over the VPN ?

Global Protect split tunnel can be configured via application. Here are the current applications related to Teams. You may have to create a custom app to distinguish between audio and video.
