What happens if I have a newer version of GlobalProtect and something like InTune tries to install an older version? Does it just fail? Does it fail but restart the service?

As far as I know, first the already installed version needs to be uninstalled. After that it does nor matter if you install a newer or older version with intune, sccm or something else. Without the uninstall, installing any other version will fail.

If you have a newer version of GlobalProtect installed and something like InTune tries to install an older version, typically the installation will fail due to version checks. Most software has mechanisms to prevent downgrading. The service might temporarily be disrupted during the attempt, but it should resume normally once the installation process recognizes the version discrepancy and stops.
