Due to certificate pinning on mobile applications and the inability to easily deploy certificates for decryption without an MDM, there's some effort that needs to go into this. You essentially have two different paths:
1) I'm using an MDM and these are managed devices - Cool, I don't recommend that you accomplish this through the firewall even when you have everything in place for decryption. Just use your MDM to block the installation and running of whatever applications you don't want on the device.
2) These aren't managed devices - Due to the above issues, you'll need to do these blocks strictly through URL. Identify all of the domains that your intended mobile application requires and block them. Just know that this won't cleanly block the mobile app; you simply block the application from functioning properly. This will cause confusion for users and you should prep your helpdesk about this change so they know how to respond to the calls that they'll be getting.
